Blueberry Lavender Belgian Waffles
Mother's Day in coming up very soon and time is running out. However there is still time to do something sweet to give Mom a little sugar. We suggest trying this recipe for Blueberry Lavender Waffles! The wonderful lavender aromas add a beautiful flavor complexity to the dish that delight and surprise her. Just be sure to use edible lavender from the spice section of your local market and not from the sachet in her sock drawer. Serve these up as breakfast in bed or for dessert after a long day of spoiling and relaxation. Of course you can always serve this with a delightful glass of bubbly. Waffle Ingredients:
- 2 cups Cake Flour or All Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 4 large Eggs, separated (2 yolks, 4 whites)
- 2 tablespoons Granulated White Sugar
- 1/2 teaspoon Vanilla Extract
- 1 stick Unsalted Butter
- 2 cups Milk or Buttermilk
- 1 tsp Lavender
- 1 cup Fresh or Frozen Blueberries
- Non-Stick Cooking Spray
- Preheat your waffle iron. Belgian waffle irons work best for this recipe though the flatter style waffle iron is also functional.
- Sift the flour into a large mixing bowl with the sugar, salt and baking powder. Be sure that it is all well sifted together. Re-sift if necessary.
- With two more smaller mixing bowls, separate the eggs whites from the yolks. You will need the yolks of two eggs and the whites of four eggs.
- Add the milk and vanilla to the egg yolks then whisk together till it becomes a soft golden liquid.
- Melt the butter in the microwave for 30 seconds or so.
- Quickly whisk the egg whites in their separate bowl until they are light and fluffy.
- Pour the yolk milk mixture into the bowl of dry ingredients. Stir to combine the ingredients.
- Once these ingredients are about halfway combined, add the melted butter to the bowl. Stir this in until the ingredients are all fully combined.
- Gently fold in the egg whites and the blueberries. If using frozen blueberries, thaw before adding to the batter.
- Spray the waffle iron with cooking spray and ladle the batter evenly into the hot iron. Before closing the top, crush a small pinch of lavender between your fingers and sprinkle over the top of the waffle.
- Cook the waffle for a 24 minutes. Flip at half time if your appliance allows.
- Release waffle from the iron once it is a deep golden brown and set on a plate for garnishing as desired. Repeat.
Lavender Vanilla Whipped Cream: You will need 1 cup whipping cream, 1 tsp lavender, 1 tsp vanilla extract and 2 tbsp granulated sugar.
- In a small sauce pan, bring the cream and crushed lavender to a simmer.
- Remove from the heat and strain the liquid into a container, discarding the lavender.
- Chill the cream for a couple hours before using. Also chill a large mixing bowl at this time.
- Using the chilled mixing bowl, quickly beat the granulated sugar and vanilla into the cream. Keep beating until soft and fluffy. A hand mixer is very useful for this step but arm power is also effective.
- Chill again until ready to use.
