Roasted Carrots and Honey Drizzle Recipe

Sometimes, the most memorable dishes are the simplest ones. One of my favorite veggie dishes to make is roasted carrots. Carrots are usually a boring afterthought served on the side, but this simple roasted and slightly sweet version is far from boring. When you roast them just right, they transform from basic root veggies into caramelized, sweet-savory bites of goodness.  

Whether you're looking for a weeknight dinner upgrade or a beautiful side for a holiday spread, roasted carrots with honey drizzle are always a win, and they're super easy to make.

Cook Time: 25–30 minutes

Ingredients:

  • 2 pounds carrots (peeled and cut into 2–3 inch sticks or left whole if slender)

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 2 tablespoons honey (use good-quality honey for the best flavor)

  • Optional: 1 tablespoon chopped fresh herbs (like parsley or thyme) for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Prepare the carrots. If your carrots are large, cut them into even sticks or diagonal slices. If they’re small and thin, you can leave them whole. The key is to make sure they’re relatively uniform in size so they cook evenly.

  3. Season and toss. In a large bowl, toss the carrots with olive oil, salt, and pepper until well coated.

  4. Roast. Spread the carrots in a single layer on the baking sheet. Roast for 25–30 minutes, flipping once halfway through, until they’re tender and have golden brown edges.

  5. Drizzle with honey. As soon as they come out of the oven, drizzle the warm carrots with honey. Toss gently to coat. Garnish and serve warm.

Want to take things up a notch? Try one of these easy add-ons or swaps:

  • Spicy Kick. Add a pinch of crushed red pepper flakes or cayenne to the honey before drizzling.

  • Citrus Zing. Stir in some orange or lemon zest to the honey.

  • Earthy Warmth. A dash of cinnamon or ground cumin pairs well with the natural sweetness of carrots.

  • Nutty Crunch. Sprinkle toasted almonds or pistachios over the top before serving.

  • Herbaceous Touch. Fresh thyme or rosemary can be added before roasting for a savory layer of flavor.

What to Sip With Honey-Drizzled Roasted Carrots?

With the natural sweetness of carrots and the honey glaze, you’ll want a wine that complements the dish without overwhelming it.  Try a dry or off-dry white wine with bright acidity to balance that sweetness.

  • Riesling (Dry or Off-Dry). Offers citrus and mineral notes that highlight the carrots while keeping things refreshing.

  • Chenin Blanc. A slightly honeyed white wine that plays beautifully with the glaze.

  • Pinot Gris. Its subtle fruitiness and crisp finish pair nicely with roasted flavors.

If you’re feeling bold, a light-bodied red like Gamay or Pinot Noir can also be a fun match, especially if your version of this dish includes some added spice or herbs.
