Grilled Chicken Caesar Salad Recipe

Grilled Chicken Salad Recipe

This grilled chicken salad is fresh, hearty, and packed with flavor. Juicy, perfectly seasoned grilled chicken sits on a bed of crisp romaine lettuce, crunchy croutons, and shaved Parmesan, all tossed in a creamy dressing. It’s the kind of salad that eats like a meal. Satisfying, balanced, and perfect for lunch or dinner.

Ingredients

For the Grilled Chicken:

  • 2 large boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon dried oregano

  • Salt and freshly ground black pepper to taste

  • Juice of ½ lemon

For the Salad:

  • 2 heads romaine lettuce, chopped

  • 1 cup cherry tomatoes (optional, if you want extra freshness)

  • 1 cup croutons (store-bought or homemade)

  • ½ cup shaved Parmesan cheese

For the Creamy Dressing (Caesar-style):

  • ½ cup mayonnaise

  • 2 tablespoons freshly grated Parmesan

  • 1 tablespoon Dijon mustard

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

  • 1 teaspoon Worcestershire sauce

  • Salt and pepper to taste

  • 2–3 tablespoons olive oil (to thin, if needed)

Instructions

1. Prepare the Chicken

In a small bowl, mix olive oil, garlic powder, oregano, lemon juice, salt, and pepper. Rub this mixture evenly over both sides of the chicken breasts.

Let the chicken marinate for at least 20–30 minutes (longer if you have time — up to 4 hours in the refrigerator).

2. Grill the Chicken

Preheat your grill (or grill pan) to medium-high heat.

Grill chicken for about 5–7 minutes per side, depending on thickness, until internal temperature reaches 165°F.

Remove from heat and let rest for 5–10 minutes before slicing. This keeps the chicken juicy.

3. Make the Dressing

In a bowl, whisk together mayonnaise, Parmesan, Dijon, lemon juice, garlic, and Worcestershire sauce. Season with salt and pepper.

If the dressing is too thick, slowly whisk in olive oil until smooth and pourable.

4. Assemble the Salad

In a large bowl, toss chopped romaine with dressing until lightly coated.

Transfer to a serving platter or individual bowls.

Top with sliced grilled chicken, croutons, and shaved Parmesan. Add cherry tomatoes if using.

Serve immediately while the chicken is still slightly warm.

Optional Add-Ons

  • Sliced avocado

  • Crispy bacon bits

  • Red onion slices

  • A soft-boiled egg

  • Extra lemon squeeze before serving
