That's why it took him years to find the perfect property in 2002 at Chateau Jean Faux. The park like setting of the property is an estate with a lot of history dating back to the 18th century. Pascal does everything right at his property, from organic farming, green harvest and manual harvest in crates.Cement and stainless steel tanks , cold prefermentation maceration. Aged for 12 to 14 months in 100% French oak, 50% new.
