Earth Day is upon us and we like to showcase all the delicious aspects of what the earth can grow with this beautiful shaved vegetable salad. This salad has the perfect balance of tang and crunch, with a twist of beautiful vibrant colors. The fresh herbs help create this amazing balance of earthy notes.

The tang comes from the salad dressing that is made with lemon juice, honey and oil. They are whisked together creating a bright vinaigrette. The crunch comes from the fresh veggies that have been shaved by a mandoline slicer (or precise knife skills). There is a hint of creaminess with the crumbled goat cheese added on top. This salad is perfect for a meal or as a starter. 

We have a few organic wine suggestions that would go perfectly with this vibrant salad. The first would be a Sauvignon Blanc and Semillion blend from Chateau Jean Faux Bordeaux. This Bordeaux White has notes of dried lemon, grass and white flower, pairing perfectly with the tangy vinaigrette.   Baker Lane Sonoma Coast Pinot Noir has hints of dark fruits, such as black cherry with a mouthfeel of crisp tannins. This would pair nicely with earthy vegetables such as beets. We saved the Rosé for last, but not least. The Claude Riffault “La Noue” Sancerre Rosé, has a complex finish and would pair with the fresh goat cheese and medley of vegetables.
