Ancient Peaks Paso Robles Cabernet Sauvignon 2015
Ancient Peaks Winery is family owned and all of the grapes come from estate grown fruit in the heart of Paso Robles. They have their own AVA called Santa Margarita Ranch. This AVA is the southernmost vineyard in Paso Robles region and recently recognized in 2014 as a new sub AVA. The maritime influence along with unusual diverse soil makes this a distinct area for growing vines. Indeed, Margarita Vineyard spans five separate soil types that ebb, flow and intermingle throughout the vineyard. This soil diversity is rooted in the abundance of local faults found around Santa Margarita Ranch. Over millions of years, the geologic shearing and uplift along these fault lines has created a rare mix of soils.
Originally the first grapes were planted her in 1700 by the Franciscan missionaries. Later in 1999 Robert Mondavi Family started to modernize viticulture at Santa Margarita Ranch. Ultimately three families: Filipponi, Rossi and Wittstrom took over the ownership.
This Cabernet Sauvignon comes from 4 distinct blocks grown on a combination of ancient sea bed and rocky alluvium soil. Aged for 16 months in French and American oak barrels. A small dash of Zinfandel was incorporated in the final blend to broaden the mid-palate fruit character.
The 2015 Cabernet Sauvignon presents dark fruit aromas of black cherry and cassis with suggestions of black olive, pencil shaving and tobacco leaf. A broad, mouthfilling texture unfolds with flavors of red cherry, currant, blackberry and kirsch. Lingering notes of cedar, anise and clove spice are interwoven into a juicy, lively finish. Pair with rich textured dishes such as beef tenderloin, pasta with lamb ragu, eggplant and grilled ribeye steak. 13.5% Alc.
